Anyone here like or make sauerkraut or other fermented veggies?

Yesterday I watched a video on how to make homemade sauerkraut. https://www.youtube.com/watch?v=EO90h3xB3oc There's something kind of hypnotic about her videos *shrug*

I know it and other fermented veggies are supposed to be good for us. Pre- and probiotics and all. I like sauerkraut okay every once in a great while. As in, once in maybe 3 years. Kimchee is not for me, so that's out. Tried kombucha and while I've had worse things, meh, don't get the craze for it.

What about you? Are you into the fermented veggies thing? Have you tried some? What did you think?

Love sauerkraut, esp on brats

It is great on brats. Dogs too.

Yup

Cat, have you ever prepared sauerkraut and spareribs? If not, you are missing a most delicious dish. I serve mine with mashed potatoes & baby carrots. The aroma coming from the oven makes you very hungry.

reply

I don’t make it, Cat, because I do not have a yard in which to burry it and ferment it, but Korean Kimchee is DELICIOUS and rich in fiber.

Sauerkraut. So that's how KFC came up with their Coleslaw salad recipe!

So i am gonna try making KFC coleslaw salad at home. those internet recipes dont tell u about the fermentation part. Just put yeast on it or instant yeast on it it will take few mins to get it to the required taste. OH YES!

KFC’s coleslaw isn’t made with fermented cabbage! It’s made with grated raw cabbage, grated raw carrots, mayo and seasonings such as vinegar, sugar, salt, pepper. I have never heard of making coleslaw with fermented cabbage! It would go in the garbage disposal!

Vinegar is fermented what? I think the processes are somewhat similar how to prepare them. Anyway thanks for that post. Vinegar is made through the fermentation of ethanol alcohol.

Not apple cider vinegar! Yes, it’s fermented.

I purchase one bag of the coleslaw mix (shredded cabbage & carrots). I prefer Dole, but will use Walmart's brand in a pinch. For the sauce: In a separate bowl, 1 cup Mayo, 1 Tablespoon milk, 1 Tablespoon sugar, 1 Tablespoon Bragg’s Organic Raw Unfiltered Apple Cider Vinegar, 4 slices minced fried bacon (Oscar Meyer Bacon Bits will do), salt &pepper to taste, blend throughly, combine with the mixed slaw mix. To make it more colorful and tasty for my family I add 1 can drained, rinsed & dried red kidney beans (Bush or Joan of Arc)

I don’t use white vinegar for anything other than floor cleaning, laundry, boiling eggs. It’s made from coal tar!
