I'm surprised she is only listed as 5'8". In everything I've seen her in, she seems taller! I would have thought she is around 5'11", or possibly over 6'.

No, 5'8" seems just right. It is just that most Hollywood Actors & Actresses lie about their height. So 5'4" is streached to 5'7". Like Angelina Joli 5'7", or Meg Ryan 5'8"? I don't think so. Try 5'5".
Mary is very likely a true 5'8".

You and me both. I was surprised when I saw 5'8". I was expecting her to be taller than that.
