Why are TV shows remembered for only certain characters?

The Mandalorian had Baby Yoda, otherwise it would be very boring and unremarkable, and Game of Thrones had Tyrion Lannister, everybody's favourite drunk, womanising and quippy dwarf, easily the most popular character.

In a huge cast like that everyone will have their own favorite characters, but Tyrion was included on everyone's list of faves because he had all the best lines!

For the first 5 seasons, anyway.
