when they have that couple in the car with them bonnie asks the guy what he does he says 'im a undertaker' why does she tell them to get them out?

It's a bad omen. Think about it, undertakers work with dead people. In short, Bonnie doesn't want to be reminded of death.

I wondered this too and assumed the same as you guys. Another thing just shortly before that, when they ask Velma her age, she replies '33', and Eugene (Wilder) looks shocked. I again just assumed, this time that 33 is old in comparison to the rest of them, especially considering that at least Bonnie and Clyde never made it past 23 and 25 respectively.

Bonnie was the only one in the gang who realized they were doomed. Undertaker was a reminder of this.

The morbidity of working with dead people makes some squeamish and uneasy, and it kind of freaks them out some.... think of all the movies we see where someone encounters a dead body and screams, freaks out.... you get the idea.

In real life, the Barrow Gang actually did kidnap an undertaker for a few hours before releasing them. When Bonnie found out his profession, she didn't have him kicked out of the car, she told him, hey maybe he'd work on her some day.... That is exactly what happened: He was one of the undertakers who worked on the body of Bonnie....
