Did John and Joey sleep together in Hawaii?

Sorry if this is a dumb question, or if this was answered in the movie, and I missed it...

It was answered in the movie. There's the whole scene where Joey is talking to her mother and she points out that SHE wanted to have sex with John, but John refused because he didn't want her to get hurt (presumably, he was assuming her parents would object and she'd have to break it off).
