Good place to start is Sweet Sweetback's Baadasssss Song, which effectively defined this wave of films. Superfly is another important film. Avoid the later tongue in cheek ones such as Blacula. to be honest you can't do better than Shaft.

Shaft.
Truck Turner.
Coffy.
Foxy Brown.
Blacula.
Sheba, Baby.
The Omega Man.

TO continue:
COTTON COMES TO HARLEM (predates "Shaft" and "Superfly" and presents a blueprint to follow: car chases, graphic violence, white gangsters and nudity)
TRUCK TURNER
BLACK CAESAR
THREE THE HARD WAY (Jim Brown, Jim Kelly and Fred Williamson try to foil white supremacist plot to turn black folks into zombies. Nuff said!)
TROUBLE MAN (worth seeing if only because it features Marvin Gaye's only film score)
THE MACK
WILLIE DYNAMITE

Across 110th Street while I wouldnt call it blaxploitation, it really captures many of the elements of the genre.

...One that most people haven't heard of; "The Spook who sat by the Door". It's an importent political film about urban racial concerns of the late sisties and early seventies that probably should not be dismissed as a blaxploitation, but was. It recieved limited release, because of it's then timely black revolution theme. That it was filmed in Chicago in 1972, given the climate of censorship, seems incredible.
People are just getting dumber, but more opinionated-Ernestine (Silks) in "The Human Stain"

Black Lightning. I just saw it at a film festival last week and I thought it was a hilarious homage to old blaxploitation films. It doesn't even have a page on IMDb yet, but I still managed to find a trailer on youtube miraculously. Keep your eye out for this one.

Definatly not a Blaxploitation movie, but has some relevent scenes with Super Soul...Vanishing Point (1971 version). Shares alot of the messages that the Blaxploitation films of the era conveyed too.

See the hilarious parody of blaxploitation that Damon Wayans made with Jim Brown, Isaac Hayes, and a short hilarious turn by a then unknown Chris Rock.
