I probably missed it, but how was her absence explained on the show?

I seem to recall that she was supposed to be out of town. Then when season 2 started, it was announced she had died.

Originally, there were audio-recorded messages of her voice. But when season 1 was reran in the summer, they went back and recut the episodes to remove her voice; this was when they started filming of season 2.

Yes. They also removed the references to the fact that she was out of town helping a pregnant relative.

I wish the original episodes would be released again.
