The episode you're thinking of is called 'In', written by series creator Leon Griffiths for the 1982 third series. The Scottish adversary on the bus was played by none other than the now internationally famous character actor Brian Cox!
The fight on the double decker London bus (ah, the nostalgia of it!) was about as violent as 'Minder' ever got. Along with the savage fist fight in the episode 'Another Bride, Another Groom', this third series probably had more scenes of brutality than any other in the show's fifteeen year history. From the fourth series onwards the violence was toned down in order to make it a family show, and the comedy elements began to replace the fisticuffs and street fighting of the first three series.
