Should a seasoned criminal like Frank Nitti really have any reason to panic and initiate a shoot out?

Even when Ness realizes that Nitti had Malone's address written down in a matchbook, it doesn't really prove anything (other than a "smoking gun") in court, now does it? Then again, Nitti did have close ties with Al Capone and having the home address of a gunned down Chicago cop like Jim Malone (who just so happened to be shot in his house), would've been enough to trigger an investigation.

Yeah. It was done just so we could have the ending where he throws him off the building. I sort of like that ending but at the same time I can see why some people are against it as he breaks a major law and murders him. In real life of course, this didn't happen. Sean Connery's character didn't exist in real life. Frank Nitti would take over Capone's gangs after he went to prison. Then he'd commit suicide on March 19th, 1943 when he was forced by the mob into taking the fall for robbing Hollywood. He preferred to die over going to prison.
