I remember when this first came out. Ice apparently talked about how he was a motocross champion before he was an "artist" and that he did do his own stunts.
Then as it turned out, some tabloid show like "A Current Affair" or "Hard Copy" found out that he never did any of it and all the stunts were someone else. We call that "The day Ice melted."
He actually was a Motocross champion. He raced the circuit from 1981-1985 and won a couple of championships in Miami and in Dallas.
He took it up again in 1993 and raced professionally throughout the 2000's.
As I heard the story, the studio advised against him doing his own stunts because they couldn't halt filming if he got hurt but he did some of the jumps. (He obviously didn't do the last jump over the car but I think he did the fence jump).

There's no way he jumped the fence. If the filmmakers were going to let him do that stunt they'd make sure to actually show his face in the shot. Instead it's photographed from the lowest angle possible in a way that completely disguises the face of the rider. There's no way it's anything other than a stunt person.
