Hannibal sure acted cool when Mason told him what was in store for him. He even said he was glad he had to live with a jacked up face. Then as he's being brought in so the hogs could eat him he still doesn't seem scared at all. He was moments away from the most painful death imaginable and cool as a cucumber.
Did he not care? Too much pride? Had those pigs started he'd have been in agony.
I think Hannibal's character was so messed up and lacked a regard for life in general. He had probably been ready to die at any moment and wanted to go with a flourish rather than show fear, whixh would only make his enemies happy.

In short, the character of Hannibal is possessed of extreme, unnatural calmness.
This is not to suggest that Hannibal doesn't care what happens to himself or has no fear at all--it's just that it's greatly reduced from that of a normal person. There are plenty of things in this film I found implausible, but Hannibal's implacable calm in the face of situations that would send the average person into hysterical panic isn't one of them. People like that do exist.

What my interpretation was was that Hannibal had complete and utter faith in Clarice to rescue him, he even allowed himself to get captured just to test her and her incorruptability, he was so enamoured with her and thinking she would not allow him to become the victim of a corrupt revenge killing that all other FBI and police in the movie were happy to let happen to him that he KNEW she would get there, his absolute faith in her courage and incorruptability meant he had nothing to be afraid of.. the perfect couple.. they can just never be together , just my two cents
shareHaving just seen that scene, I can comment that while there's no respond on Hannibal's face, as you see his chest moving it does seem that he's breathing faster, so there's defintely some adrenaline/fear response there, just not a obvious one.

I think I remember seeing him sweating heavily in that scene, so I think there was a little bit of panic. But people like him put on a brave face all the time. Also he was probably just focused on a way of getting out of it and not just screaming and accepting it.
