First let me say that a I freakin' hate Valon, the guy was a @#$%ing a$$hole who kept trying to turn her into something she wasn't because he had the hots for her, (even if he was under an evil spell at the time, he was still making his own decisions). I'm glad he and Mai went there separate ways. That's why she gave him her Harpie card, so he would have something to remember her by because they wouldn't meet again.
As for what happened to Mai, after the whole thing with Leviathan, Dartz and the Orichalcos, she told Joey had she had to get some of her affairs in order and overcome her inner demons, but she would return to him when she did. Later, we see a few scenes of her watching Joey Duel on TV, and she stares at him lovingly. Both she and Joey are clearly in love. I know the writer for the manga had intended for their relationship to be platonic, but that's not the way it turned out, and it was even more evident and expanded up in the anime.
