I really didn't get the line about the sheep. How does that make someone cool? Could I get an explanation please.

He is so chilled out and cool that sheep count him when they sleep.

Its a reference to when people who have trouble getting to sleep are told to count sheep. It focusses the mind on somethind kind of boring and induces relaxation and then sleep.
