What exactly would have happened if....

Santa didn't get married by Christmas? I don't think it is really strongly implied.

I know Scott says at the end something along the lines of, "I stop being Santa, the elves lose their jobs and the North Pole disappears and Christmas will be gone", but what exactly does that mean?

I wondered that, too. Maybe Santa actually has to 'pass the torch', either by dying in some sort of accident or by physically handing over the coat to someone he chose as a replacement. If there's no one to pass the torch to, then maybe everything's void. Scott still wanted to be Santa, so he didn't bother looking for someone to become Santa in his place.

Or something. The movie is a bit vague here.

It means Scott would stop being Santa, the elves would lose their jobs, the North Pole would disappear, and Christmas would be gone.

One of my favorite hidden gems of Christmas called Single Santa Seeking Mrs Claus. At one point in the movie the woman breaks up with Santa when he tells her he is Santa. The movie shows all the Christmas spirit of Christmas is gone. People toss their trees on the curb, Christmas decorations are gone and businesses all open up again. No one is celebrating Christmas. The movie says Mrs Claus is the spirit of Christmas so she’s just important as Santa.

The movie has a second movie called Meet The Santa where they meet the in-laws to celebrate Christmas.
