So with what exactly do I begin, the 90s anime? And then the film trilogy and then the new series? Is that a sequel or a reboot? I'm confused so if someone would kindly offer a brief overview of everything to watch and in what order I'd really appreciate it.

shareI would advocate watching the '97 anime first. Then start from the beginning of the manga, and don't skip the Golden Age once you get to it. There's a lot of stuff the '97 anime had to cut for time and censorship reasons. You can avoid the movie trilogy and the 2016 anime if you want. They don't offer much.
