Probably from the lack of fast food and having to do manual work all the time.

So? He wasn't there to embroider curtains, he did menial tasks. It would build light muscle.

Women in movies have hairless, toned bodies, white teeth and impeccable makeup when playing medieval peasants facing starvation and the plague, yet nobody seems to mind.

Let alone folk during the time this movie was set didn't have great teeth either.

Well he did so menial hard labor. I would assume that would build some muscle over time.
