The paramedics saw Bruce Dern's body before he was shot in the chest in the end. The news was all over this story. I think they would notice that the body they examined was without gullet damage and wonder how it eventually got shot.

They may have been the only ambulance crew available and would have had their hands busy keeping Big Stan alive. They probably just put Dern in a zippered bag since he was bloodied all over and obviously dead.

Well aside from the fact that shooting someone after they're dead isn't the same as shooting them when they're alive. If any ME was halfways looking, they would see. Not to mention potentially the indentations in the table, or tracking the bullets to the sheriff's gun, etc.
