Seeing that in the game you CAN carry those items, I am guessing the OP didn't play the game at all.
He uses those fairly often, but they have a durability rating, that expires causing them to break after so many uses.

An infinite knife like Ellie has would have come in handy playing as Joel. But the game aims to be more challenging and makes you craft a shiv which breaks frequently and then you have to gather supplies and craft more. Ellie has an infinite knife, but her "stealth" kills with the knife are actually REALLY FREAKING LOUD. It's a challenging game. But when you master it, it becomes relatively easy. For instance, there is a glitch that allows you to have basically an infinite supply for shivs, upgraded melee weapons and nail bombs. You just switch an upgraded melee weapon with a non upgraded melee weapon back and forth.
