Was the dog already dead, or alive in the car when it was taken?
I assumed was already dead (I hope so, anyway) and he was on his way to bury it when the car was stolen.

I think it's obvious the dog was already dead. Why should he be in the trunk if not dead? He loved dogs. The film starts with the profile of Eric, staring into the nothing, silent, rather sad.. before he opens the door of the car.

Yes, the dog was dead. Eric (Guy Pearce's character) was on his way to bury the dog. He stopped to have a stiff drink because burying your only friend in the post-apocalypse sucks. His car got stolen and this served as the initiating event for everything that followed.
