He's made lots of great ones, but I just saw what may be his best: The Human Factor (1975). He is the lead (not supporting) actor and his role is as a computer expert who's family is killed by terrorists. He singlehandedly tracks them down and...well I won't go further, but it's definitely a great ending!
Anyway his other great ones where he is supporting actor are:
Flight of the Phoenix
Airport
Cool Hand Luke (for which he won the Oscar)
to name a few.

Chatanooga Cho Cho.

Okay, maybe not best, but he was great in this odd film.

Don't judege me.
I watched it the other day because it popped in my head.
Crazy how much of it I remembered, as my only viewing was as a kid.

Got to go with Cool Hand Luke, though I haven't seen most of them.

George Kennedy is good as the detective in 'The Boston Strangler' which I re-watched recently. Robert Shaw was first choice for that role. But I reckon George Kennedy makes a better detective. He was good in authority roles.

The one where he handles a floppy dildo powered by a chain saw.
