Never understood this - especially after Sonny treated them with respect and let them have a round of beers even though they were in violation of the bar's dress code. Did this get expanded on in any other scenes?
shareI suspect...Sonny was well dressed, and all the other people in the bar respected his wishes. Looked up to him. But the bikers wanted to be the Alpha group - not Sonny. The biker Alpha's then had something to prove. And were mistaken.
I admit, I particularly like this scene. Not because of the violence, but because of what you mention. Sonny showed courtesy, and fools did not accept it. And then he was not so courteous. Lesson learned. Be nice. Say Please. Say Thank You.

It made no sense that those bikers would act the way they did after Sonny treated them with respect. Looks like a plot hole to me

Sonny spoke softly, but the bikers didnt realize he carried a big stick. They just thought he was some bar owner with no real threat to them. So they acted their impulses which was to be assholes to everyone and carry on with ill will toward all around them. In the bikers world a tough guy was tattoos, big beards, shaved heads, strong arms, a tall stature. They werent able to see a guy in a nice suit as someone that could hurt them and dole out as much violence as they often lashed out with themselves. Also the bikers were bullies and they are the type to take kindness as a sign of weakness, this mixed with their lack of concern of being able to see Sonny was a threat to them, is what lead to them to carry on like a bunch of assholes.
It didn't matter how they were treated, they were in there to cause trouble and nothing more.
