Potato Salad!


As a true southerner one has to learn to make this delicacy. I cube my potatoes in 3/4 inch pieces and boil them with an egg. The hard-boiled egg is then minced. I add minced onions and sometimes sweet cubes, but the sweet cubes depend on my mood. I like a bit of mustard to give it a yellow "tinge" and always use Hellmann's mayo. A dash of pepper and you're done.

Mac salad has always been a summer thing for me. When I vacation in the summer I like to have a big bowl of it in the fridge. Bell peppers and olives. I love it cold or hot.

Huge Seinfeld fan... Even bigger Curb nut. Any time I've met a 'Feld fan who hasn't delved / isn't into Curb it boggles my mind. I'm reaching for an analogy where if 'Feld is [nice but more basic, packaged, processed version of food item], then Curb is the small farmed, organic, no gmo, farm to table, gourmand version, but I can't be assed to complete the thought rn.

Sweet pickles that are diced. I don't always add them. I like diced hot peppers but as I am usually making it for others I don't go that route often. Sweet cubes are very southern.

Diced sweet pickles, lol. Very southern(American). I come from a Scottish background as a lot of people that settled in the southern United States. We use cheap things like potatoes and make them fancy, lol. We also do amazing things with pigs, although I have to tip my hat to slaves for finding ways to make all parts of the pig taste good. Necessity breeds loveliness.

Chow chow is different from sweet relish which I keep on hand, Vlasic brand. I use a bit in my Southern tater salad, in my tuna salad, egg salad. I love good chow chow with fried fingerling catfish. We used to go to a catfish restaurant in Rockwall, Texas that served the best chow chow I’ve eaten.

In the last 10 years I’ve become highly allergic to raw onions...I can’t be near them. There went my potato salad & macaroni salad which I had made for decades. I cannot tolerate store bought salads. A few months ago a I did a search for baked potato salad without onions. I located and made one...it was delicious! Recipe follows:
