It's hard to pick a whole series because most of the good successful ones last too long and lost their appeal like CSI, ER, The Simpsons, MASH. There are series I have only seen a season or two so far which I like very much, like Wild Wild West, The Six Million Dollar Man, Game of Thrones, Hawaii 5-0, Bewitched, Hogan's Heroes.

Star Trek original
The Night Stalker original
The Twilight Zone original
MASH (first three seasons)
Cheers
Police Squad!
Sledge Hammer!
Newsradio
Seinfeld
The Simpsons (the first ten seasons)
Friends (first five seasons)
Ned and Stacey
The King of Queens
The Middle
Arrested Development
Firefly
True Detective (first season)
Twin Peaks (original)

I started watching a few series I am loving so far:
Last Man Standing with Tim Allen, just started this series and love it already, any show that makes fun of socialism, Obamacare and soccer is my kind of show
Gilligan's Island, I've nearly completed the first season, silly great fun

Haven't seen a lot of mini-series but I did love:

Band of Brothers
From the Earth to the Moon
Masada
Lonesome Dove

Adam-12
Twilight Zone
Leave It To Beaver
Star Trek : TOS
MASH
Little House on the Prairie
